What to eat if you suffer from celiac disease

In the diet for celiac disease , foods belonging to the various product categories are divided into 3 lists:

  •  Allowed ( gluten free );
  •  At risk;
  •  Prohibited or prohibited (with gluten ).

Among the “at risk” foods there are some products that may be gluten-free, therefore suitable for coeliacs, but which may also have an unknown botanical origin or be “at risk of contamination in the various stages of production”. In this regard, we recommend the  GLUTEN-FREE COMMERCIAL PRODUCTS HANDBOOK  drawn up by the Italian Celiac Association. This handbook indicates the food products guaranteed by the gluten-free manufacturers.

Cereals and Flours

Permitted foods

  • Rice , Early Childhood rice cream
  •  *  corn (corn) , corn kernels (corn),   home-made popcorn
  •  * creamed corn and tapioca; cream of rice, corn and baby tapioca
  • buckwheat
  • manioc
  •  * millet

  •  *  malt ,  maltodextrin , malt extract,  maltose ; dextrose
  •  *  rice flour ,  rice starch ,  rice semolina  , rice cream
  •  *  corn flour , flour for   pre-cooked and instant  polenta , ready polenta, cornstarch  ( corn starch )
  •  *  carob flour
  •  *  chestnut flour
  •  *  chickpea flour
  •  *  coconut flour
  •  *  buckwheat flour
  •  *  almond flour
  •  *  millet flour

  • flours, starch, semolina, creams and flakes of: wheat, rye, oats, barley, spelled, spelled, kamut, triticale, sorghum, KOKOH
  • multigrain cream
  • pasta, stuffed pasta,  potato gnocchi ,  gnocchi alla romana ;
  • pizzoccheri
  • bread ,  sandwich bread , breadcrumbs; rye bread ,  oat bread , cereal bread ,  soy bread , corn,  iron ; unleavened bread
  • wholemeal bread ,  wraps ; taralli ; croutons,  pretzels
  • focaccia , pizza,  panzerotti ,  bread sticks ,  crackers , rusks,  crackers ,  crepes

  • muesli ,  porridge

Sweets

  • biscuits, sweets, cakes,  snacks ,  wafers ,  totally gluten-free dietetic snacks  (without wheat starch)
  •  *  honey ,  sugar  (granulated white,  cane ,  wholemeal )
  •  *  licorice root , pure licorice

Risky foods

  • * chocolate  drinks
  •  *  soy puddings  and  desserts
  •  *  cocoa
  • sweets,  licorice sweets , lollipops, sugared almonds,  jellies  and  candied fruit
  • chewing gum
  • chocolate,  chocolates , chocolate pralines,  cocoa mass
  •  * creams,  puddings , desserts, mousses,  panna cotta
  • spreadable creams
  •  *   packaged ice creams ,  sorbets ,  ice lollies  and  slushes ; semi-finished products for ice cream shops

  • malted milk “OF FORBIDDEN CEREALS” and cereals

Meat, Fish, Eggs

Permitted foods

  • all types of  meat , poultry,  fish ,  crustaceans ,  molluscs
  • raw ham
  • egg

  • raw  , cooked, fresh and seasoned cured meats and sausages:   cooked  ham , coppa  , bacon  , speck  , bresaola  , bacon  , mortadella  (  or bologna),  wurstel ,  salami ,
  • cotechino ,  zampone ,  sausage
  • ready roasts

  •  packaged meat sauce
  •  canned tripe
  • surimi

Prohibited foods

  • meat and fish  breaded (e.g.  Milanese cutlet ) or floured (e.g.  scallops ) or with  sauces  thickened with prohibited flours.
  •  Fresh and/or frozen meat and fish  hamburgers with the addition of flour and/or breadcrumbs
  • fresh and/or frozen meat and fish with the addition of flour and/or breadcrumbs

Vegetables and Legumes

Permitted foods

  • every kind of  vegetable
  • all types of legumes and dry: locust beans, chickpeas,  cicerchia ,  beans ,  broad beans , okra beans  , lentils ,  lupins ,  peas ,  soybeans
  •  * fresh and dried mushrooms
  •  *  olives

Risky foods

  • some types of frozen vegetables  (e.g. pre-fried potatoes; mashed  potatoes ; mixed side dishes)
  • chips  (snacks)
  • prepared for soups, purées, stews and legume soups
  • (ready-to-use frozen foods to be cooked  freeze-dried )
  •  instant mashed potatoes

Prohibited foods

  • vegetables breaded and floured with prohibited ingredients
  • preparations for soups, purees,  stews  and legume soups with spelled, barley and other prohibited cereals (frozen ready-to-use freeze-dried cooking)

Fruit

Permitted foods

  • fresh fruit
  • dried fruit (e.g.  almonds ,  walnuts ,  hazelnuts ,  Brazil nuts ,  pine nuts ,  cashews ,  pistachios ),  chestnuts  and  peanuts
  • roasted nuts without  vegetable oil

  • candied fruit
  • canned fruit
  • toasted nuts with vegetable oil

Prohibited foods

  • floured dried fruit

  • butter ,  lard ,  lard

  • stock cubes,  meat extracts ,  vegetable extracts , broth preparations
  • preparations for soups, purées, minestrone and legume soups (frozen ready-to-use to be cooked freeze-dried)

Prohibited foods

  • preparations for soups, purees, stews and legume soups with spelled, barley and other prohibited cereals (frozen ready-to-use freeze-dried cooking)

Various spices and flavourings

  • wine vinegar
  •  *  mayonnaise  and  béchamel  prepared with permitted ingredients
